This delightful concoction combines the richness of heavy cream, the depth of San Marzano tomato sauce, and an array of aromatic herbs and spices. Here’s the recipe:

  • 4 cups heavy cream
  • 2 cups stock or broth
  • 6 shallots
  • 3 garlic cloves
  • 1 stalks of celery
  • 1 carrot
  • 2 teaspoon marjoram
  • 2 teaspoons red chili flakes
  • 2 teaspoons fresh thyme
  • 2 teaspoons fresh basil
  • 2 cups San Marzano tomato sauce

In a large stock pot, sweat* shallots, garlic, celery, and carrots until soft and the shallots are translucent. Add all fresh herbs and dried spices and toast** for 10 seconds. Add all liquid and cook to reduce, then add any seasonal vegetables and reduce to 4 cups. Blend to make a delicious bisque.
