Glenlaurel’s Molten Chocolate Cake

Molten Chocolate Cake – serves 12 4oz cups.

Ingredients:

  • 9  oz.  unsweetened chocolate
  • 10 oz.  unsalted butter
  • 10 oz.  powdered sugar, sifted
  • 7 egg yolks
  • 6 whole eggs.
  • 4 oz. cake flour, sifted

Method:

Melt the butter and the chocolate together over a double boiler.

Stir in the sifted powdered sugar.

Add the eggs and yolks that have been beaten slightly together.

Add the sifted cake flour last, stirring in well and leaving no lumps.

Scoop into 12 4oz. oven-proof cups that have been well greased and refrigerate until needed.

Bake at 400 degrees for 10 – 15 minutes.

Serve warm.
